What is a Cider?

According to Wikipedia, Cider is an alcoholic beverage made from the fermented juice of apples. Because it’s fermented fruit juice, cider is legally classified as a wine. The production process is also very similar to that of wine than beer. As beer uses heating elements and wine does not. So technically, Number 12 Cider is a winery that makes apple wine.

What Makes Number 12 Cider Different Than Other Cideries?

Number 12 Cider is making unique ciders with centuries-old techniques. Founders Steve and Colin, have so many ideas up their sleeves to make ordinary ciders into extraordinary.

My favorite uniquely crafted cider is their Cuppajo, a semi-sweet cider made with a concoction of apples and coffee. It might sound strange but once you have it you wish you could buy it in bulk.

Ciders, Or Should I Say Apple Wine

My husband and I shared their flights so we could sample a larger variety of Number 12 ciders. They have two options a dry flight and a sweet flight. They both were equally good and if we went back I would have a hard time deciding between the two.

Picture above the top flight is the sweet flight. It consisted of:
Trilogy (fruity, melon rind, and stone minerality)
Siren (rosé, kiss of pomegranate, tannins)
Union (tropical, pineapple, banana, grapefruit)
Janiken (real maple, sweet, robust).

Pictured above the bottom flight is the dry flight. It consisted of:
Voyage (crisp with light citrus, hints of apricot, buttered rum and autumn leaves)
Humble Farmer (tart, hints of tangerine, candy wax bottles, spearmint)
Black Market (rich, jammy aroma, crisp black currant)
La Route (rustic, hints of toffee and dried apricot)

Wood Fired Pizza to go With Your Apple Wine

The sister business “Little Tomato” is located in a food truck on Number 12 Cider’s patio. Little Tomato serves fresh pizza to have with your cider.
